Texas Smoked Brisket
A whole packer brisket rubbed with salt and pepper and smoked low and slow for 14 hours over oak.



Method
Cook this dish straight through. Read the steps once before you start.

Step 1Trim brisket leaving a 1/4-in fat cap and apply the rub generously.

Step 2Smoke at 225F over oak for about 8 hours until bark sets.

Step 3Wrap in butcher paper and continue smoking to 203F internal.

Step 4Rest 2 hours in a cooler and slice against the grain.
