Memphis Pulled Pork
Pork shoulder rubbed with a sweet Memphis blend and slow smoked until it pulls apart with a fork.



Method
Cook this dish straight through. Read the steps once before you start.

Step 1Mix the rub and slather all over the pork shoulder.

Step 2Smoke at 250F with hickory until 165F internal.

Step 3Wrap and continue to 203F internal, mopping with cider vinegar.

Step 4Rest 1 hour, pull apart with two forks and toss with mop sauce.
