Thai Green Curry
A coconut-rich green curry with chicken, Thai eggplant, basil and a bright finish of fish sauce and lime.



Method
Cook this dish straight through. Read the steps once before you start.

Step 1Fry curry paste in the thick top of one coconut milk can.

Step 2Add chicken and brown, then pour in remaining coconut milk.

Step 3Add eggplant and lime leaves and simmer 15 minutes.

Step 4Finish with fish sauce, sugar and a handful of Thai basil.
