Spinach and Ricotta Frittata
A golden oven-baked frittata loaded with wilted spinach, lemon ricotta, and a Parmigiano crust.



Method
Cook this dish straight through. Read the steps once before you start.

Step 1Sweat the onion in olive oil in an oven-safe skillet until translucent.

Step 2Add spinach in batches and cook just until wilted.

Step 3Whisk eggs with ricotta, lemon zest, salt and pepper and pour into the pan.

Step 4Top with Parmigiano and bake at 375F for 18 minutes until set.
