Spaghetti Carbonara
The classic Roman pasta with guanciale, eggs, pecorino, and a generous turn of black pepper.

Cook this dish straight through. Read the steps once before you start.

Step 1Render guanciale in a cold pan over medium heat until crisp.

Step 2Boil spaghetti in salted water and reserve a cup of pasta water.

Step 3Whisk yolks with pecorino and pepper, then toss with pasta off the heat.

Step 4Stream in a splash of pasta water, mix to a glossy sauce, plate, and finish with more pecorino.
