Hot and Sour Soup
A peppery, tangy broth loaded with tofu, mushrooms and bamboo shoots, finished with a swirl of egg.



Method
Cook this dish straight through. Read the steps once before you start.

Step 1Simmer stock with mushrooms, bamboo shoots and tofu for 10 minutes.

Step 2Stir in vinegar, soy sauce and white pepper, taste and adjust.

Step 3Slurry cornstarch with water and stir into the soup to thicken.

Step 4Slowly drizzle in beaten eggs while gently stirring to form ribbons.
