Lamb Vindaloo
A vinegary, deeply spiced Goan curry with tender lamb that builds slow but unforgettable heat.



Method

Step 1Blend chilies, vinegar, tamarind, garlic and ginger into a paste.

Step 2Marinate lamb in the paste overnight.

Step 3Brown the lamb in batches, then add onion and spices.
