Coq au Vin
Bone-in chicken braised in red wine with pearl onions, mushrooms and bacon until fork tender.



Method
Cook this dish straight through. Read the steps once before you start.

Step 1Render bacon, then brown chicken in the fat.

Step 2Deglaze with wine, add stock, tomato paste and bouquet garni.

Step 3Braise the chicken at 300F for 90 minutes.

Step 4Saute onions and mushrooms separately, then fold them in to finish.
