Quiche Lorraine
A silky bacon and Gruyere custard in a buttery pate brisee crust, baked until just set in the middle.



Method
Cook this dish straight through. Read the steps once before you start.

Step 1Blind bake the crust at 375F for 15 minutes.

Step 2Render bacon until crisp and sprinkle into the crust with Gruyere.

Step 3Whisk eggs, cream, milk and seasonings and pour into the crust.

Step 4Bake at 325F for 45 minutes until just set with a slight jiggle.
