Avocado Toast with Poached Egg
Smashed avocado on grilled sourdough with a runny poached egg, chili crisp, and a squeeze of lemon.



Method
Cook this dish straight through. Read the steps once before you start.

Step 1Toast the sourdough until deeply golden and rub with olive oil.

Step 2Bring a pot of water to a bare simmer with vinegar, swirl, and poach eggs 3 minutes.

Step 3Smash avocado with lemon and salt and pile high on the toast.

Step 4Top each toast with a poached egg, finish with chili crisp and flaky salt.
