Tonkotsu Ramen
A rich pork-bone broth, springy noodles, soft egg, chashu and a tangle of scallions in one perfect bowl.



Method
Cook this dish straight through. Read the steps once before you start.

Step 1Boil pork bones hard for 6 hours until milky and rich.

Step 2Strain the broth and season each bowl with soy and miso tares.

Step 3Cook ramen noodles in boiling water for 90 seconds.

Step 4Build bowls with broth, noodles, chashu, egg, scallions and nori.
